Thai Green Curry

What you need:

  • 2x chicken breasts

  • Jar of thai green curry paste

  • Tin of coconut milk

  • 140g of white rice

  • Tenderstem broccoli

  • Red chilli, finely sliced

Serves two

Start by washing your rice and leaving it to soak in cold water. While doing that, brown off your chicken breasts, then add in your thai green paste. Fry it off for a few minutes, then add your coconut milk and cover.

Put your rice onto boil and let simmer for 12 minutes, until the chicken is cooked through completely, then add your sliced chilli and tenderstem broccoli, letting it cook covered for another five minutes.

Shred your chicken and serve.
